Very rarely ,does one not get tempted by Nigella Lawson’s decadent desserts ! Having said that ,a lot of them either involve technique ,special equipment or a lot of ‘heavy’ ingredients. This one ,however was far simpler and was not overloaded with cream or an unbelievable quantity of butter. The fact that these are baked individually ,also makes them endearingly luscious.

Being a family of chocoholics,this dessert hits all the right notes. It’s quick to make ,ooozy , chocolatey and makes you feel all warm and fuzzy after eating it. I had made it a few times awhile ago ,before my life as a blogger, and had forgotten it until very recently.

Having a special guest who radiates sunshine is reason enough to remember to cook up a delicious dessert that echoes her sweet nature ! I’m glad I did ,because ,full justice was done ,the bowls were licked clean !!! This time ,I did think that the quantity of sugar could be taken down a notch. I would definitely recommend using half a cup instead of the recommended three quarters…but the choice is entirely yours !

As always ,the whole grain flour is the way I opt to go. Natural sugars are also a great substitute. We also like the addition of the strawberry here. The slight tartness of the fruit ,perfectly cuts through the richness of the chocolate. Good quality chocolate is highly imperative for this recipe. The compound chocolate is sadly unhealthy as it is loaded with hydrogenated vegetable oil ,in place of the rich cocoa butter. Read the labels ,before you buy chocolate. If you’re gonna eat it ,you might as well indulge in the real thing rather than something that is a poor imitation of it !

Do try this dessert ,it takes mere minutes. I love that I don’t need to take out my electric blender,so less of all that washing up ! The end result when the spoon pushes through that thin crust and scoops up a puddle of melted chocolate is un-real and makes you want to jump up and down…I think I actually did 😉

 

 

Sitting in solitude with a good book and a delicious dessert is also plenty good for the soul !

For the chocoholics who absolutely need a cold scoop of vanilla ice cream with a hot chocolate pud…I think this is one such dessert that will satisfy that need of you watching the frozen white ,melt into a creamy pool and merge with it’s darker companion…. Enjoy !

Ingredients

  • Dark or Milk Chocolate couverture- 135 gms
  • Castor (unrefined palm sugar) Sugar - 1/2 cup to 3/4 th of a cup,depending on your sweet tooth
  • Eggs-2
  • Whole grain flour-3 Tbsps
  • Vanilla extract-1/2 tsp or Vanilla essence- 1 and 1/2 tsps
  • Ripe red strawberries-150 gms (optional)

Instructions

  1. Melt the chocolate and butter in a double boiler or in a dish over a pot of simmering water. Take care that no water droplets get into the chocolate .
  2. In a clean bowl ,whisk the eggs with a hand whisk.
  3. Add in the castor sugar and continue to whisk together until well combined.
  4. Add the vanilla flavouring and mix in.
  5. Sift in the flour and fold it into the egg mixture,thoroughly .
  6. At this point,pour in the melted chocolate and blend it in with the other ingredients,with the help of a spatula.
  7. About 25 minutes before serving dessert,pre-heat the oven to 200 degrees C
  8. Brush 4 individual small ovenproof bowls or ramekins ,with butter,on the base and sides.
  9. Dollop in the mixture evenly into the 4 bowls
  10. 20 minutes before serving ,place them in the medium hot oven.
  11. Do a quick check in 15 minutes ,if a crust has formed on the top.
  12. Once the top has set nice and firm ,the chocolate pots are ready for serving.
  13. Choose a plump strawberry and slice it on the diagonal. Set in on the corner as a pretty garnish.
  14. Serve it immediately. The crust on top should give way to exposing the delicious melted chocolate underneath.
  15. If it has been left in the oven a few minutes longer ,the inside will still be soft and moist but not molten and liquidy. All in all ,this is chocoliciousness undoubtedly ! Enjoy.
