Fried eggs with tomato and cheddar

I use the term ‘fried’ as that’s what these eggs look like and the technique used in cooking them is the same. In actuality,I use very little olive oil,just a smear really and they are perfect ! Eggs are a staple breakfast for the kids at least 3 days of the week. In addition to milk and fresh fruit, I like to give them a wholesome breakfast,especially on the days that involve a lot of outdoor play !

Mine are not too fond of toast with their eggs (clearly not any of our genes…must be a mutation ;p )…so I try and make the egg accompaniment a little more substantial. It also needs to cook fast and be easy to eat,otherwise it leads to chaotic mornings before school…which nobody wants !!! Fortunately they love tomatoes and that is a great paring with eggs. Cooking tomatoes increases the lycopene absorption and I love to watch the edges curl until they get that burnished colour. Grilled tomatoes have always been mum’s favourite !!!

These are extremely simple to make ,just plan it out in your head about 15mts before cooking time. The eggs and tomatoes are ready in about 8 mts…tomatoes take longer depending on the size. We like the eggs cooked until they are just set,which means the yolk has to be all molten and oozy ! (Perfect to dunk bread in but,what do I know !!!?!..I’m just the mom ! 😉  )

The richness of the egg is perfectly complimented by the freshness of the tomato.To add lusciousness to this breakfast ,try it with some bacon . The flavours come from the light sprinkling of a garlic oregano seasoning over the cheddar. I think these tomatoes will even taste good,wrapped in foil ,to be eaten later ! A good option for a lunch box accompaniment,maybe ?!
