Lemon and Rose Granita

The first time I tasted a granita was many years ago. It was , I remember flavoured with coffee and offered as a palate cleanser before we moved on to stronger spicy flavours. So deliciously cold,it was amazing how such a tiny serving was so packed with so much taste ! Since it is primarily made with water,the flavours are very sharp and strong. A great dessert to indulge in. Even more so for those who are on a diet or when you need something light in the hot summer months.

Rose water and me go way back to my childhood days. Of times,spent with my head on my mother’s lap while she soaked cotton pads in rose water and placed over the tired eyes of her “over worked” kids ! To this day,just the memory of rosewater rejuvenates and refreshes and of course I carry on the tradition with my kids…and it’s a lovely feeling.

More recently,as an adult,rose water has creeped in to my middle eastern dishes,flavours my cupcakes and generally enchants my kitchen at home. So,it was but natural that I wanted to make a summer granita with the fresh flavours of rose water. The lemon is but a natural addition,seeing as I am so obsessed with it…but I tell you,having made it,it’s definitely a match made in heaven. But…I wanted the pink tooo…enter rose syrup or real rose extract…added the much needed blush. Once forked through the jewel like shards were indeed like pink quartz crystals glistening in the morning sunlight.
