Baby carrots…just the sight of them puts a smile on my face. They are so cute and so crunchy and  sweet ,that I hate to do too much to take away from that “specialness” about them !!! But pan roasted baby carrots are yummy. When they arrived at my home in Coimbatore from the cool hills of Coonoor,I had to make them immediately ! The lunch was already getting prepared and the menu in no way would go with my roasted carrots…despite that, I had to make them for fear that the busy week ahead ,might see these languishing in the refrigerator ! An unthinkable option !!!!!

Having dear friends over,made me want to serve these all the more ! Unfortunately the meal could have been planned better !!! Nevertheless,this is a great recipe to put together quickly and my family have a special affinity towards baby carrots !

Having carrot greens in my garden,I could not pass up the chance to add them to the roasting carrots. Greens in all form are very healthy and these are no exception. If you do happen to have access to baby carrots or have someone driving down from the mountains of Ooty, Coonoor or Kodaikanal ,do try your hand at this simple but delicious recipe !

Ingredients

  • Baby carrots-1/2 kg
  • Dried oregano-1 tsp
  • Extra virgin olive oil-1 Tbsp
  • Garlic- 2 cloves- finely diced
  • Dried thyme-1/2 tsp
  • Salt and freshly ground pepper
  • White wine vinegar-1/2 tsp
  • Carrot greens- 1/4 C (optional)

Instructions

  1. Wash the baby carrots and peel them.
  2. In a pan ,add the olive oil.
  3. Add the carrots,the dried herbs,garlic bits and mix.
  4. Turn the stove on low heat and gently stir the carrots.
  5. Once,well coated,close the lid and let cook for about 5-6 mts.
  6. Remove the lid and turn the carrots over,add salt and pepper.
  7. Now snip in some greens and mix in.
  8. Close the lid and turn off heat,leave it for 10 mts.
  9. The residual heat should cook the carrots,yet retain the crunch.
  10. Open the lid,add the vinegar and let simmer for 5 mts.
  11. Serve hot with some lightly spiced buttered rice or some grilled meats.

    Tasted as delicious as they look. Recently I had baby turnips not roasted but like a salad. It was yum too.
