Baked feta with olives

I am reminded so much of the fun people we had over for a supper club meal at our home last year. The theme was Greek ,the ouzo was passed around ,the table was set complete with grapes of the Mediterranean 😉  fairy lights and tall hellikonia stems. The mood was chatty and it was time to bring out the baked feta.

As luck would have it,our local store had beautiful Greek feta just enough to pass around at our dinner. A lot of research went into making the menu. The flavours needed to be authentic and give off the vibe of a home cooked meal. The brief was to keep it simple yet delicious.

The baked feta and olives did fall within that…the portakalopita did not but that’s another story ! I will always remember how much this dish was enjoyed.The toothpicks kept dipping in for seconds, thirds and then we lost count !

It’s surprising that I haven’t made this more often,given how easy and delicious it is. Warm, gooey and salty. We ate it for dinner with some sour dough bread and ratatouille. Different cuisines maybe but fit perfectly.

Oh the Mr. had buttered rice with it !
