As a kid the word butterscotch always sounded so exotic to me. It conjured up so many images of a delicious sauce served up for teatime to pour over steamed puds (pudding) and tarts.  The imagination then went on to include ice cream sundaes, the kind served at The Chock’lit Shop by Pop Tate for Archie and the gang, at Riverdale. I would always wish for Archie & Betty to share a sundae and would hate for Veronica to step in to the picture.

If only life held complexities of these kind in store for us !!! The favourite of course was ‘the bottomless pit ‘ ,Jughead who ate like there would be no tomorrow. For an Indian kid,living in a small town those Archie Digest pizzas were the ultimate in food deliciousness . (face in palm)

When my kids came along I was rather late in introducing them to the Archie comics…maybe I wasn’t ready to answer some (Ahem) questions which I knew would come my way…delaying it a bit or so I thought !

BUT…I did introduce them to caramel sauces , sundaes, apple pies and all of it as a weekend treat or initially (as they are quick to point out) only as a holiday treat.

The thing about making a butterscotch sauce at home is that it makes everyone happy. The cook enjoys the whole process of watching the simple ingredients turn into a smooth, luscious, dark , molten sauce….everyone else just loves eating it …but yes happy happy !

Just for that ,make the butterscotch sauce. ….Umm did I mention that the commercial ones are loaded with things I don’t want to mention…yes that too !

Give me one good reason why making this is not on your to do list right now !

 

I said one “GOOD” reason.
