Coconut jam squares

This is a recipe which was shared by my mother at a time when I first began baking after I got married. The red bound book has been well used and the repeated flipping of the pages have rendered them a bit fragile but I still have this book staring back at me from its perch on the recipe book stand on my kitchen wall.

Every recipe in this book has been written down soon after it was made and tasted.That’s what mom asked me to do and I continue following it up until today. I simply have to write that recipe down, Also gives me a chance to keep the handwriting skills going !

This recipe was originally called raspberry coconut slice. It asked for a raspberry jam and the closest I have come to that is using a strawberry jam made by a friend. I first made this recipe for my sister-in-law when she told me that she liked coconut in desserts. I remember carrying it to her home from the tiny apartment we lived in back then. (pretty sure she doesn’t remember :))

I did make it a few times but it took a back seat with all the chocolate and citrus desserts which seemed to be more suited to the family’s taste buds. I took this recipe out a few days ago after having made a bottle of mixed fruit jam .Do you remember, I posted it a few days ago. It’s on the blog section. Loved making it and all the more enjoyed using it in this recipe.

It tasted absolutely great and hence worth a share. I also realised that a few of the grapes still had the seeds in them (face in palms).Thank goodness these squares tasted so good that no one really cared to fuss about the seed discoveries !
