Coconut pannacotta

A pannacotta,smooth on the tongue and creamilicious to the taste buds, has ,of late, been  ‘the’  dessert,to indulge in. I’ve always wanted to try my hand at making one but me and golden gelatin have never been great pals !!! So, I’ve always been more than happy to  taste the handiwork of other wonderful cooks. While panna cotta means cooked cream,the thought of putting a lot of double cream was not one that was very welcome in my head ! Fortunately there have been variations made by professional chefs and lately ,the urge to try a buttermilk pannacotta was a constant passing thought. It was around that time that a friend,foodie and fellow blogger invited a bunch of us to a wonderful meal and served a “deelicious” yoghurt pannacotta. It was to die for and I felt extreme guilt for days that I had indulged in not 1 but 2 helpings and that my family had not !!!!

What to do?!! Extreme guilt calls for extreme measures !!! Like a ray of sunshine on a dark cloudy day,the recipe was offered to me,to try ! On that very day,I did happen to have a lot of left over coconut milk and the pannacotta was what was upermost in my mind.A coconut milk pannacotta ,it had to be ! I did hesitate to pair yoghurt with coconut milk but I knew it wouldn’t hurt to try. In all honesty,it does not taste as good as the yoghurt panacotta but it does have it’s own special taste. The pieces of tender coconut taste heavenly,especially in the midst of hot summer and the green of the pistachios look so pretty against the stark white and add the perfect contrast in texture to the smooth pannacotta !

I was so happy that it turned out great and it has definitely encouraged me to try many more combinations to add to my list of quick,easy ,healthy desserts. The only time needed is for it to set,so you need to decide a day in advance if you want to make a pannacotta ! That’s not too hard,I think 🙂
