When the founder member of a hard working team comes to me with a collab offer,it’s hard to say no. He didn’t really give me too much time either… With all the working from home plus work AT home,it seemed almost impossible to add anything else into my hectic schedule.

Like I mentioned before, saying no wasn’t an option because every experience I have had traveling and writing for The Pollachi Papyrus has enriched my life in many ways…as a freelance writer definitely but also as a someone who has understood what it means to live on this planet. The kind of different topics which we have visited together,as a team over the past few years has been nothing short of amazing and completely fulfilling.

The fact that we work well together and have mutual respect is another reason why I knew it would be fun to do this episode on the ‘Couch explorers with Papyrus’ series. Doing a vlog was another first …it wasn’t too bad once I focused on what I wanted to say 🙂

So ,the idea to do this was obviously because we have all changed the way we cook. We are all looking at keeping things simple, working with minimal ingredients and still trying to churn out nourishing , tasty meals for ourselves and our loved ones. I for one have never been more grateful for the spice powders and whole spices which form the core of an Indian kitchen. These ingredients allow us to create wonderful dishes using basic every day fixings.

The brief therefore was to use ingredients which would be available in most kitchens and turn it into something a little more interesting. Using leftover rice,as I mentioned in my vlog, is nothing new to us. Our paatis and thathas ,moms, aunts have all found ways to convert cooked rice leftovers into something yummy. Rather than talk about a fried rice or a flavoured rice, we decided to do something more along the lines of a quick snack.

 

 

 

 

One never knows when hunger pangs will hit and this seemed just right for any time of day. Believe it or not my stock of garlic was so meager that I could not spare it for this salsa. That’s why my recipe uses only ginger and it did turn out quite tasty. There’s just so much you can top a crispy rice cake with and I would love to see your own version of this quick ‘lockdown snack’.
