I have always loved cake….as far back as I can remember ! They used to call it ‘cut cake’ back then ,maybe they still do. There was the regular tea cake or as my mother liked to call it,”pound cake” which was made at home quite regularly more than any other cake.
Come to think of it, I think it was tea cake , a chocolate cake and sometimes a date cake .Other than that my mother’s generation of home cooks were more fond of turning out creamy puddings and saucy desserts which were super delicious. The cakes were more of a tea time treat and not really thought of as after dinner dessert.
When we started baking at home, cakes always had some sort of frosting or glaze or at the very least a sticky syrup. My children are so used to cakes being adorned that a simple tea cake ,I am told, feels dry…at least to the younger offspring. My much better half is the one who is less likely to fuss (when it comes to eating cake !)
When celebrating a birthday, the cake knife always goes to mom after the first cut is made because she just can’t stand seeing a cake cut badly. So while cutting this cake instead of the usual wedge which I know to do,I overthought it and my knife made a neat square !!! Just for that I will always remember this tea cake collab which I was a part of on Instagram with the many talented bakers.
Do try this simple recipe. If you don’t like lemon,you can always add vanilla or cinnamon or even tea or coffee. enjoy it at tea time with a hot cuppa…we had some piping hot tulsi and lemon tea.

It’s much appreciated 🙂 If you live in India the best replacement for cow’s milk is ,I am told, coconut milk,cashew milk or peanut milk because that’s what grows here in plenty. A lot of people use almond milk but that again since the almonds are mostly imported the bacteria from our environment to that where the food is grown is different.
