Star fruit salad

My childhood bestie sends me home grown star fruit…not in small batches but in a crate. At first I was so taken in by these fruits because of the pretty shape. The taste of that crunchiness mixed with the mildly sweet/sour gave in to so many possibilities for recipe development.

We made a star fruit jam at first which came out great. Being someone who loves the freshness of a papaya salad, I wanted to do something along those lines. This salad was literally born out of all the ingredients which I had at home one day.

Trim the edge off the ridges with a sharp knife.

We had picked some fresh kaffir lime and country pomegranates from the plants at the farm. Small onions too had just come in from a village shandy.The colours were lovely…yellow almost to a shade of neon, the small pomegranates were a brilliant ruby red,green coriander, purple shallots and the golden topping of pan roasted peanuts.

How could it not taste good ?!

It did not disappoint in the least….one of my favourite salads to date.
