This is one of those easy recipes which came together during the initial days of the lock down. With so many tasks at hand, every day food had to be made as simple as possible without compromising on taste. The many recipes which have quickly become much liked at home have expanded my knowledge even further on making the kind of food which involves less time in the kitchen….the fact that I do tend to get carried away and do a few more is another thing entirely !!

The reason I wanted to share this recipe is because my understanding of Indian ingredients has changed so much over the years after following Rujuta Diwekar. That has not just helped in creating tasty fare but has also helped in achieving fitness goals not just for me but also for my family.

Like many of my generation I too grew up believing that cashew nuts were so unhealthy, eating 2 meant compensating it with a brisk 2.5 km walk around my neighbourhood etc etc  Rujuta then helped me make the connect between the Indian diet and the food which grows closer to home…the cashew nut /peanuts /coconut suddenly took on a whole other view from a dietary perspective…if today I feel better and am able to enhance fitness and lifestyle goals it is only thanks to this mindset.

So,I urge you to try this recipe without the fear or guilt that you are treating your body to something unhealthy. If you are Indian, make the cashew nut a part of your diet. Your DNA and metabolism will thank you. Eat it as a part of  your meal or as a snack before a workout…not in a bowl watching your favourite Netflix series… just saying !

It’s a creamy gravy which takes minutes to whip up and is so delicious !
